Leek and Potato soup…a welcome winter warmer

I’ve always had a soft spot for Leek and Potato soup. I remember in my high school cafeteria on days when I did not bring my own bag lunch from home, I would cross my fingers and hope that the dinner ladies has made their lovely home made version of this winter classic.
Made with simple ingredients that don’t tax the budget, especially in these economic times and now in the aftermath of the holiday season, it fits the winter bill perfectly. Nutritious, satisfying, easy to make it has always been in the repertoire of soups that I make throughout the winter. I hope that this version will become a favourite of yours as well.
